Vegetarian Coconut Curry
It’s sometimes hard to find flavorful veggie food, but I made the best coconut curry I’ve ever eaten today. It was the perfect combination of sweet, salty, savory , and spicy. None of the ingredients are measured, just to taste.
Unsweetened Coconut Cream
Curry Powder
Turmeric
Cumin
Salt
Pepper
Olive Oil
Red Onion
Red Bell Pepper
Rice
Heat the coconut cream and add the spices a small amount at a time until it’s as spicy and intense as you like it. In a separate pan, saute the red onion and red bell pepper in a small amount of olive oil or similar. When onions and bell pepper are soft, add sauce to the saute pan. Heat on low heat and combine. Measure one part rice and 2 parts water into a saucepan. Bring to a boil on high heat then reduce to medium and cover until done. Serve rice with sauce on top.
